One Bowl Baked Oatmeal

Lookin' for something to do with those Oats you have sitting around?  For a while I was lost on ideas other than oatmeal cookies.  Yes they are delicious, but you can only make them so often!  Here is a fabulously delicious idea!  My daughter Katelyn ate this for dinner.  You heard right.  Dinner.  She sliced up some banana's threw them on top and ate it all.   This also reheats really well.


1 1/2 Cups Quick Cooking Oats
1/4 Cups Packed Brown Sugar
1/4 Cups White Sugar
3/4 Cups Milk
1/4 Cup Melted Butter
1 Egg
1 tsp. Baking Powder
3/4 tsp. Salt
1 tsp. Vanilla
1/2 Cup Peanut Butter


Preheat oven to 350 degrees.

In a oven safe bowl, melt butter in the microwave.

To that, add all of the rest of the ingredients.

Including the yummy Peanut Butter!
  Mix together.  Place in the oven for 25-35 minutes.

You will know it's done when the edge starts to brown.  You can put these in an 8x8 dish or a 9x13.  If you do, adjust your cooking times accordingly.

Serve with Bananas, maple syrup, milk, whipped cream etc.  You really can't go wrong!

  1. I didn't want mine too sweet so I used some apple sauce in place of the white sugar. Also, out of peanut butter (I know, crazy!)- so I ground up almonds to a powder in a spice grinder for my protein. Everyone loved it! Thank you!

  3. Making it for second time, all four kids LOVE it, thank you! Next time will experiment with using honey/agave/xylitol and remove white sugar. Genius recipe for kids :).
