Ingredients:
1 Pkg. of Tortellini of your choice.
2 Carrots
1 medium Onion
2-3 cloves of Garlic
1 Large Can of Chicken Broth
1 Large Can of Crushed Tomatoes
2 Cups Fresh Spinach
2 tsp. Italian Seasoning
Salt and Pepper for taste
Cheese for Garnish
Directions:
Start your Tortellini and cook according to package directions.
Chop up all your veggies.
Have your personal assistant nearby to help with anything you need.
In a pot, start cooking your carrots in a tablespoon or so of oil.
After about 3 minutes, add your onions and garlic. Cook for about 3-4 minutes.
Add in your can of chicken broth and stir. Bring to a simmer and cook for about 5 minutes.
After about 5 minutes, add in your spices.
Salt and Pepper
Add in your can of crushed tomatoes and stir to combine.
Next, add in precooked Tortellini.
Bring this back up to a boil to have all the flavors combine. Boil for 1-2 minutes and then add in your spinach. Stir until all the spinach wilts.
Serve topped with Parmesan cheese.

ReplyDeleteNice that you went with good brand tortellini - after I ran out of fresh pasta, I learned the hard way that the dry stuff (as opposed to the frozen) is pretty darn bad. Oh well.
