Lemon Haddock in Parchment Paper

Are you looking for an extremely easy dinner that tastes amazing and has nothing but healthy factors to it?  Look no further!  This is thrown together in minutes, cooks in 15 and has so many health benefits!   

Summer is coming.  I think most of us wish we were thinner this year but if you're anything like me, you know it's a hopeless effort to look like you wish you looked like.  This meal could possible help you get there, as long as you don't follow it up with a bag of chips, like I did.   There's always tomorrow! 


1 lbs. of White Flaky Fish (I used Haddock)
1 Lemon, Sliced
1 Veggie of your choice (I used Zucchini)
Salt and Pepper
Parchment Paper


Preheat oven to 400 degrees.

Place your cut veggies in the bottom of a piece of parchment paper, big enough to make into a packet around the fish and veggies when all is said and done.

Place 1 fish fillet on top of the veggies.  Salt and Pepper that fish! 

Place 2-3 thin lemon slices on top of the fish.

Roll up the sides of the parchment paper and then roll in the sides.  You want it to stay closed on it's own to roll it tightly.  

Bake at 400 degress for 10-15 minutes.  The parchment paper will start to brown a bit.  That's a good sign.  

Open and serve!
