Garlic Scape Pesto

Eat this if you love pasta.  Eat this if you love pesto.  Eat this with people that love you.  The garlic in this is strong.  It's delicious.  It's easy.  Most importantly, keep some mints or gum around for after. 

I joined a CSA this year.  It's my first year joining so every week we get our box, it's a surprise to see what is inside.  I've never seen garlic scapes before so they puzzled me.  They have sat in my fridge for a while so that I could search the web for some recipes that peaked my interest.  The most common use for garlic scapes is pesto so I stuck with that this time around.   I'm glad I did.  It's an amazing pesto and I will make it again next year when I receive the CSA box that contains garlic scapes. 


1/2 Cup Garlic scapes
1/2 Lemon, juiced
1/2 Cup Olive Oil (I used grape seed oil)
1.5 Cups Parmesan Cheese


Start off with rough chopping your garlic scapes.  They do not need to be perfect.  Just small enough to measure out 1/2 cup and to process. 

Place into the food processor and add the lemon juice.  Process for a few minutes until the garlic scapes are nicely chopped.  You may need to scrape down the sides of your food processor a few times during the process. 

With the lid on your food processor, add your olive oil through the feed hole.  Process another 2 minutes until well combined. 

Next add half of the Parmesan cheese.  Process for 2 minutes and then add the other half and process for another 2 minutes. 

Toss the pesto in your favorite pasta, or use as a dip.
