Pasta E Fagioli

This is a knock-off version of  Olive Garden's Past E Fagioli soup.  It's the soup I always get whenever I go there for lunch to get their Soup Salad and bread sticks.  Please listen to me when I say this.  This soup is awesome!  Seriously!  It tastes just like OG's if not better!  I like that I am able to use whatever meat I'd like in it.  It also comes together very easily and the ingredients should be staples in your pantry.  I would imagine if you're vegetarian or would like less red meat in your diet, this would still be an awesome soup without the meat.

Bakers Block

I'm having bakers block this weekend.  Thursday and Friday I made 40 cupcakes, a batch of cake truffles, a batch of M&M cookies, and a batch of personal pies, all for my daughters school carnival.   I'm exhausted and suffered from a sugar high for about 36 hours.  I will be back with more recipes this week!!!

Southern Louisiana White Beans

Yep, that's pretty much the same picture as yesterday.  I NEED to give you the recipe for Louisiana white beans, because for many down there, they are as important as the jambalaya itself.  They go together.  They really do too.  They make an amazing combination.   The one thing I find with this meal is my fork is always packed full of food, every bite I took.  That's because you must get some white beans, some jambalaya, some smoked sausage and some ham all in the same bite.  It's an amazing bite and you wont want your beans or your rice to go solo again.
 White beans are very easy and really would be delicious alone even.

Last month I went on vacation in New Orleans/Baton Rouge.   Down there I was able to try a few of their well known foods and fall in love at the same time.  Ever since having some of them, I couldn't stop thinking about them.  Beniets from Cafe Du Monde being one of them.  The other is the Jambalaya and white beans.  I attempted to make this as "authentic" as possible.  My friend Paige will have to let me know how I did though!

Personal Pies cute are these little darlings?!  They turned out so adorable!  Personal sized pies are extremely easy to make and taste delicious!  This week I'll be doing a lot of baking and testing.  My daughters school carnival is on Saturday and I offered to bake cupcakes for the cake walk and also bake for the bake sale to benefit the PTO.  These are a keeper and I am excited to show them off!

Lemon Orzo with Sautéed Zucchini and Tomatoes

If you're looking for a quick and healthy meal, you've found it.  This meal comes together in about 10 minutes and is very light and healthy.  This would be great used as a side as well!

What we do in Wisconsin on the weekend

I am warning you now!  The closer to the end of the post we get, the more you may need to shield your child's eyes.  You'll see what I mean....

So I live in Wisconsin.  Cold, bitter, unbearable Wisconsin.  The summers are decent but we have a long....LONG winter to get through.  Yesterday was a beautiful winter day.  It was about 25 degree out at noon.  Not too bad!  Unless of course you're going to jump into a  frozen lake.

Fail Cookies - Round Two

What a difference!!  They turned out this time.  I had to have missed a cup of flour in there.  That seems like the only logical explanation!!  These are delicious and I can't wait to have more.  I had just gotten off the elliptical before making these so I took a bite here and there and left the rest for the morning.  I'm a glutton for punishment!

Carrot Cake with Cream Cheese Frosting

 I'm am a huge fan of carrot cake.  It's a cake that I'm not sure when I first had but I know I love.  Exactly what I mean by that is this:  My mom only made boxed cakes growing up.  She also only made chocolate or yellow cake mixes with chocolate or white frosting.  She finds something she likes and she sticks to it.  I've given her many of my "out there" dishes and desserts and she will kiiiiind of like them but you can tell she'd much rather have her normal stand by's that she knows she loves.  She only will eat out at a few restaurants, and doesn't order anything she isn't familiar with.  I will be bringing her a piece of this cake tonight.  We will see how that goes....

Fail Cookies

Have I told you that I'm not "that" perfect cook?  I make mistakes?  I sometimes have horrible dinners that my family hates?  Well, this describes some of those.  The flavor is there......but obviously I went wrong somewhere with the measurements and these cookies are crisp and thin!

White Chicken Chili

 I LOVE white chicken Chili.  It's healthy, hearty, filling and delicious.  It's so easy to make and I only discovered white chicken chili about 6 months ago!   Man, was I missing out all these years.  I'm glad I've discovered it.  I started with a basic recipe but have changed it up just a little to make it healthier and more tasty!

P-Dub's Pig Cake....As cupcakes!

I don't know about you, but I would rather have a cupcake than a piece of cake.  I prefer the single serving size.  Makes me feel better about indulging in more.  I also feel like you can put more frosting on a cupcake, than you can a cake.  The frosting most times is the best part!  Lets not forget how CUTE cupcakes are.  You are able to decorate them easier and they just look.....pretty!

Chicken Parmesan

Comfort food at it's finest.  That's the best way to describe this dinner.  It's fairly simple to make and really tastes amazingly!  I made a more chunky style sauce, which I personally prefer but Mike and the girls would prefer a smoother sauce, so keep that in mind when you choose which canned tomato style you are going to use.

Cake Truffles For Valentines Day

I've attempted to make cake balls in the past and it turned into an epic fail.  I did a couple of things wrong (how you do this wrong, I don't know) and we were left with a lot of mushy cake mixed with frosting.  This time, I took my time and did things the right way.  They turned out delicious.  My daughter Makenzie is in the kitchen sneaking one now as I type.

Rich Chocolate Cupcakes with Creamy Peanut Butter Frosting

I am so very excited about this recipe!  I looked at several recipes for both the frosting and the cupcake and decided to just use what I had to see if it would work, and it did!  They are soooo delicious.  My 3 year old daughter, Makenzie, couldn't get enough of the frosting.  She got to lick the spatula after getting the frosting out of the mixing bowl.  Thankfully she shared with me!  It is to die for!

Chocolate Chip Cookies

You can't go wrong with chocolate chip cookies.  I haven't met a person yet, that can turn one down.  They don't need much introduction but I find this recipe is one of the better ones!  I noticed after day 1, they got a little crunchy so I added a piece of bread to the storage container and they were as soft as ever.  They lasted about 48 hours in my house, although I did give a few away!!

Stuffed Green Pepper Soup.....crock pot style

I love stuffed green peppers.  My children on the other hand, could go their entire life without setting eyes on one.  Obviously this recipe didn't go over well with them.  They both attempted it, but seeing the green monsters in there scared them away.  DH had two servings, which leads me to believe it must have been pretty good in his opinion. Usually when he doesn't like something, he'll eat it....and then eat something else after he's had his share.  I liked it.  It tastes JUST like a stuffed green pepper.  There really isn't much else to describe past that.

French Dip

This is by far a family favorite.  In this house we all love it and have enjoyed it numerous ways over the past few years.  The girls sometimes like the beef alone, without the bun and Au Jus, however, since I've made it this way they have both had their share in sandwich form.  The last time I made this, DH was searching the crock pot after dinner with a fork, trying to find any meat left.  THAT is how good this is!!!
