Guten Free Raspberry Coffee Cake


So, I've accomplished making my first gluten free cake!  I must say, it tastes delicious!  You could easily make this into a non-gluten free cake as well.  I will include instructions on how to do that as well.   Thanks for hanging with me during this transition!

Chili or is it stew?


Okay, I'll start with a quick confession.  This picture was taken on day two of having this for a meal.  I forgot to take it the night I made it....because I was hungry and wanted to eat right away.  Am I the only one that has done that?  With that said, there was more liquid the first night I made this.  It sort of all got soaked right up when I reheated it the next day for lunch.  Regardless of that, it was still amazingly good and full of flavor the next day.  I had a chili flavor, but it's cooked more like a stew.  Soooo what do you call that?  I wasn't really sure.  Anyway, it's a winner!

Itchy Itchy Itchy

Today is a new day and today is the day that I'm going to start making a HUGE change in my life....at least temporarily, if not for good.  I'm going gluten free.  Lemme explain here a bit as to why I am doing this.

For the past two months, I've been itchy.  Like really really itchy.  My arms, back, legs, chest, neck, ears have all been really itchy.  They are so itchy it's to the point that I'm scratching myself to bleeding.  I've been in and out of the doctors office's trying to find out what is causing this.  I've had blood taken, skin scraped, biopsies done, and we are no closer now to getting a diagnosis than we were 2 months ago when I first went in. 

A little over a week ago, my doctor gave me dapsone to see if that would help and it actually gave me relief.   It was nearly unbelievable that after 2 months of scratching, I wasn't scratching anymore!  Now that my biopsy came back negative though, I'm done with that prescription.  Slowly my itching is coming back.

There is a rash that was associated with this itch.  For a while we thought it was dermatitis herpetiformis aka the skin version of Celiacs disease.  The biopsy for that, however, came back negative.  Now I'm so lost and confused and frustrated.  I want to find out what's causing this.  I go to an allergist this week.  I'm really not sure what they will do and if they will have a better idea of what is going on.   My dermatologist wants to do the skin patch test on me in 2 weeks to find out what I am allergic to.  I just wish I knew if this would give me answers. 

I feel like I need to take my health into my own hands, at this point.  I am in need of figuring out what is going on with me, so I am going to do my work and start to eliminate things to see if they are the true cause of why this is happening.  Today I start that journey.  Today I am eliminating gluten. 

You may or may not have noticed that the posts have slowed over the past month.  It was just a rough month and I found it hard to do much of anything, including cooking.  I will get back to normal though.  Please stick with me!  I love you guys!  This week will most likely still be slow as I try to figure out what it is that I can and can not have.  I am thankful to have you loyal readers though, and hope that you'll stick around through this!

Tortellini Soup

Since our weather refuses to make the change from winter to spring, we are still into our soups around here.  I think that may be the one and only good thing about still having winter like weather.  I love soup, if you haven't noticed.  Mike even had the gull to say that I make too much soup.....who says that?!  Who FEELS that way?!  Insane I tell ya.

Orzo Stuffed Peppers or Casserole


These stuffed Peppers are AMAZING.  If you are looking for a meal to make that doesn't add any meat, this is a great one.  I ended up using chicken stock in mine because that's what I had on hand, but if you're looking to make it vegetarian, you can easily do that with vegetable broth instead.  I made these for lunch yesterday and ate the entire thing and then continued to eat the casserole until it was gone.  Um...yeah.  Over load. 

April 20th....

You wouldn't know it by looking at these pictures, but today is April 20th.  Spring.  The Ground Hog didn't see his shadow this year, right?  I have a few recipes I'll be sharing the rest of the week, however, I thought it would be important to capture the last snow of the 2010-2011 snow season.  Here's hoping!

Beer Battered Fish

Up here in Wisconsin, a fish fry is something many many people do each and every Friday.   You can't find a local restaurant or VFW that isn't packed on a Friday night with people ordering either Perch or Haddock.  I personally love the baked or fried haddock and look forward to any Friday we get to go out and get some.  Ever since we've had our girls, we haven't made it out nearly as much as we used to.  This fish was VERY good and the crust turned out really crunchy!  It's a good substitute to when we aren't able to actually go out for fish.

Gorilla Bread

Prior to making Gorilla bread, I had only had Monkey Bread.  It's pretty much the same thing with the addition of cream cheese and nuts....although some recipes for monkey bread have nuts in them.  It's easy to make, fun to eat, and the kids can help you out!

Spicy Chicken and Cashew Lettuce Wraps

So....these are delicious.  And they are fairly healthy for you!  The sodium levels are up there but fat and carbs are not.  My sister and I nearly polished off the entire things to ourselves today.  That's not exactly uncommon for us but we both enjoyed the flavor of the chicken and cashews a lot!

French Toast

First I want to start off with telling you a simple lesson I recently learned!   It's hard to explain to a 5 year old, who doesn't live in your house, why you are taking a picture of all the food you're making.  With that said, I recently made this french toast for my girls and their friend for a sleep over.  It went over extremely well!  All three girls had two slices each and I had....my share as well.

Spicy Bean, Corn and Tomato Burrito


As of late, I am trying my hardest to make better choices with the foods I eat.  I am good with portion control and getting a balance of foods, but I want to eat more organic and healthy foods.  I went today to the health food store and bought some things I thought would help me get through!  Do worry, I will still make my sweets :)  Like I said, I am good at portion control!

One Bowl Baked Oatmeal


Lookin' for something to do with those Oats you have sitting around?  For a while I was lost on ideas other than oatmeal cookies.  Yes they are delicious, but you can only make them so often!  Here is a fabulously delicious idea!  My daughter Katelyn ate this for dinner.  You heard right.  Dinner.  She sliced up some banana's threw them on top and ate it all.   This also reheats really well.

The Best Chocolate Cake


I've seen this recipe around.  Many foodies use it and I can't disagree with them.  It is the best chocolate cake.  It's rich, moist, and holds up well.  Please try it!  I think you'll be won over as well!!  I have now made it 3 times and I don't think I'll be straying away from it any time soon!  The Rose Cake Idea came from I am Baker.

She has a lovely tutorial over at her site on how to do the rose cake.  It's really actually quit easy if you get the right frosting for the job!  I brought this cake my moms birthday for dinner and people were gawking from all over.  I even had another table come over and ask where we got the cake from.  I offered them a piece, which they happily took. As any foodie knows a compliment is the greatest feeling in the world!

Creamy Cole Slaw


A great thing happened when I made this cole slaw.   My husband did something he rarely does.  He told me it was the best home made cole slaw that he had ever had.  My heart was happy and his stomach was happy.  He then went on to say that he doesn't understand why people make it any other way and that every cole slaw should be like this.  Made my day!
