Almond Sheet Cake


I've been very busy around here.  I'm sorry.  I have really lacked on posting lately.  The truth is, my husband and I are doing a huge bedroom make over.  It's been going on for over a month now but it's getting down to the end and we are spending most of our free time doing that.   The weather has also been beautiful and I've been busy planting flowers and fixing up the yard.

I will show you before and after pictures of the bedroom once we are done.  We built a new closet, painted the ceiling,  painted the walls, painted the furniture, made a new head board and put new carpet in.  We did it all on our own so it's taken so much time and it feels amazing to have only a couple of things left to do.

I did managed to bake a cake this weekend.  It was pretty darn good with some fresh blueberries on it!  I hope to get more done this week, or next with baking and get back into full force with the recipes in the very near future!

Pistachio Cupcakes


About a month ago my daughter had a birthday party to attend.  It ran a bit late and the parents sent Katelyn home with her piece of cake.  I got to sneak a bite of two or seven and I was hooked.  It was delicious!  I am now on a mission to find out what the flavor of the cake was.  Was it almond, pistachio or some other flavor I'm unfamiliar with?

I thought I'd start with pistachio because the cake itself was actually green.  That doesn't mean she didn't use green food coloring to accomplish this color considering the cake itself was of Yoda, who is also green. 

In the end of it all, I'm not 100% sold that the cake was pistachio.  These cupcakes were sooo delicious, and light but it wasn't exactly like the cake I had.  I may never find out what this cake was.  The father of the birthday girl told me he drove 3 hours one way (6 hours total!!!) to pick up the cake the night prior from an 80-something year old woman that made all his cakes as a child.  If only I could get my hands on that recipe!

Lemon Haddock in Parchment Paper


Are you looking for an extremely easy dinner that tastes amazing and has nothing but healthy factors to it?  Look no further!  This is thrown together in minutes, cooks in 15 and has so many health benefits!   

Summer is coming.  I think most of us wish we were thinner this year but if you're anything like me, you know it's a hopeless effort to look like you wish you looked like.  This meal could possible help you get there, as long as you don't follow it up with a bag of chips, like I did.   There's always tomorrow! 


Ingredients:

1 lbs. of White Flaky Fish (I used Haddock)
1 Lemon, Sliced
1 Veggie of your choice (I used Zucchini)
Salt and Pepper
Parchment Paper

Directions:

Preheat oven to 400 degrees.

Place your cut veggies in the bottom of a piece of parchment paper, big enough to make into a packet around the fish and veggies when all is said and done.

Place 1 fish fillet on top of the veggies.  Salt and Pepper that fish! 

Place 2-3 thin lemon slices on top of the fish.

Roll up the sides of the parchment paper and then roll in the sides.  You want it to stay closed on it's own to roll it tightly.  

Bake at 400 degress for 10-15 minutes.  The parchment paper will start to brown a bit.  That's a good sign.  

Open and serve!

Curried Chicken and Rice

We've had a sneak peak at spring here and as quickly as it came, it was taken right away from us again.  Oh well.  It could be worse.

Today was Sunny...but windy and cool.  I'll take sunny any day though.  This is great comfort food if you're in a part of the country that is still waiting for spring to stick around for good.

Two Girls, same parents, SO different....

My Baby

It's no secret.  I have two daughters.  Katelyn, my extrovert.  Makenzie, my shy girl!   How is it possible to have such different girls from the same parents??  Katelyn is loud, crazy, talkative, and out going to name a few.  Makenzie is all of the above when she's a home....however...get her out of her comfort zone and she closes right up.  She gets "the look" and you can literally feel the way she's feeling at that moment. 

This past week was her last week of preschool for the year.  Each year they do a program where the kids sing songs that they learned throughout the year.  Each song has hand motions that go along with them as well.  Of course Makenzie would take no part in hand motions. 

Walking out to perform.  Refusing to look at me and wave like the rest of the kids that were actually excited to see their families.

Overall, everything ended well.  She got through it.  I got through it and in the end she was her normal silly self once she got a hold of a powdered sugar donut hole. 

The Best Yellow Cake


For a cake recipe to have the "Best" title there are a few things that must be present in the final product.  The cake must be airy.  Light and fluffy.  It should have a great flavor.  No bland cupcakes here!  It should be easy enough to make!  I'm a mom after all.   And lastly, must make me actually go "Oh wow, that IS good."   These were no exception.  They are very delicious and even though they have a couple different steps in them, are pretty easy to make!

Crock Pot Cube Steak in Mushroom Gravy


This is so much tastier than it looks!  My husband and kids gobbled it up and asked for seconds.  Sadly, the meat was gone by the end of dinner so we had no left overs!  I'm the only one in the house that likes mushrooms, however, once they are cooked down my family couldn't tell it was a mushroom gravy as long as I made sure there wasn't any sliced mushrooms on their plate.  I took them and put them on my plate instead!  Problem solved!

Crock Pot Gluten Free Lava-ish Cake


So for those of you that guessed, no one guessed right!  It's basically a very rich chocolate cake that it's still gooey and not totally set.  I thought it would set a bit more than this, but I was worried it would start burning around the edges, where I had set, so I just called it a day and whipped up some whipped cream to top it with.  It's delicious.  Very rich and oh so hits the chocolate needs I was having that day!

Embarrassing Photography

The weather in my neck of the woods had made my lack of photography skills stuck pretty bad.  My house lacks good southern exposure and big huge windows in my kitchen so I often have to plate up my food and carry it to some other room to set up an area to get good enough lighting.  The day I made this, however,  was so dark and gloomy that even moving it to another area in the house didn't work.  The picture just truly failed, and for that, I'm sorry!  This dish is good....I promise...it's just that sometimes I just am not very good at photography. Did I just say that?  It felt good! 

I will get this recipe out to you tomorrow though!  Until then, you can try to guess what it is.

Spring? Soccer and Coffee


What is up with the weather this year?!  It's still so dang cold out there I can barely stand it!  My daughter started soccer tonight and we froze our butts off.  I was lucky enough that Mike brought me coffee

Broccoli Mashed Potatoes with Cheesy Gouda Gravy


Comfort food.  Good for you comfort food!  Kind of!  The Gravy isn't exactly healthy but because you're putting it over healthier foods....it makes it okay!   I'm still learning my way through gluten free.  It's been hard.  I tend to stick to what I know I can have, and not steering too far away from that.   I'll learn, right?
