I was given the opportunity to try Fiber One Brownies from General Mills through Blog Spark. I jumped right on it because I have a NEED for chocolate in my life. I crave it and miss it when it's been more than 24 hours without it. The brownies are individually packaged and only contain 90 calories each. The perfect pick me up! The taste is amazing and I wouldn't expect less of Fiber One. I have had their regular Fiber One bars many times in the past and always found them to be 100% enjoyable as well. These little brownies also contain 20% of the daily recommended intake of Fiber as well. Honestly, these brownies are a win win for me. They have healthy factors and they taste delicious.

We went to my parents house and had a delicious dinner of grilled foods. Then we went off to the Summer Fun Run. It's the second of the season and this one wasn't any less exciting as the last. Katelyn has really surprised us this year and has taken 1st place in the half mile for the 6 and under group, 2 runs in a row. We are proud parents!
Don't look at me! Keep running! GO GO GO!!!
Kenzie was no less amazing! She ran the entire half mile with Mike and got 21st place out of about 40 kids for the second week in a row as well! Mama was bad and had put shorts on her that were too big so the little thing had to keep pulling her shorts up the entire race! Mike said it really slowed her down! Poor thing! Lesson learned!
I don't know who this guy is, but he's awesome. I just have to tell you that. He made my day when I saw him running by in his Incredibles costume! Mask and all!
Lets not forget this little cutie that I got to eat dinner with....

This year was my first year signing up for a CSA. If you aren't familiar with what CSA's are, I will try to help you out a bit. It's where you buy a share at a local farm to get produce fresh from their farm throughout the summer and fall. It's a lot of money up front but you should make your moneys worth by the end of the growing season.
We got our first boxes this past week and in it were Rhubarb, Asparagus, Young Garlic, and Popping Corn. I'm familiar with asparagus, young garlic and popping corn but Rhubarb took some time to come up with a good idea of what to do with it. I had never personally cooked with it before so I was a bit worried that what I made wouldn't turn out. I shouldn't have worried. This cake turned out AWESOME! It's so delicious and easy!

When I was little, I had a neighbor named Mary. She was a sweet older lady that was married to a name named "Mud." Really his name was Clay but when he introduced himself to us, he told us his name was Mud. They were the sweetest neighbors you could imagine and we were lucky to have grown up next to them.
Mary used to bake us many things growing up. The one thing that will forever remind me of her are Cherry Chip Cookies. Hers were the best! We would attempt to recreate them on occasion but always failed and ended up burning the cherry chips on the bottom of the cookie. Thanks to silicone mats, I can now make these cookies without that issue!

Summer is here and along with summer comes busy days and nights. I have lacked at updating the blog mainly because I have been so busy! When I am cooking, it's quick foods. I haven't been able to spend much time in the kitchen at all. I think I am finally to the point of having the routine down and know when my best time to bake would be so I should be back at a regular posting pace. I have a few recipes I have in mind for the week ahead as well! I applaud you for sticking around!!!

I tend to like smoothies made with frozen fruit instead of fresh. It makes them thicker and takes me a bit longer to consume that way. I also like to use fruit without added sugar. Gotta keep it healthy here people! If you prefer a bit more sweetness (this really is sweet though!) just substitute the milk for OJ or any other juice you like.
