Apple Butter (in the crock pot!)


This has got to be the easiest recipe of Apple Butter around.  It's a set it and forget it kind of apple butter.  The worst part is peeling the apples before you put them in the crock pot.   I had originally made an apple pie to share with you.  It was awesome until my 50mm lens broke and I was so heart broken that I stopped taking pictures all together.  I made that pie with a sad heart!  I will remake it, hopefully next week because it really is amazing!!!  Until then, here is apple butter.  Put it on anything you like!  It's spicy, sweet and tart all at once.  I made this with less sugar than most recipes call for.  I just didn't want it too sweet.  After it cooked down, it made two pint jars worth of apple butter.  I have on in the freezer and one in the fridge as I didn't process them.  They will keep in the refrigerator for a few weeks this way.   You can also store them in smaller containers if you don't think you will go through a pint in that amount of time.

My First Born

She.is.Awesome. The words of her Kindergarten teacher at the very first teacher conferences I went to. I couldn't agree more. She IS awesome. There are SO many words to describe this girl of mine. Here are a few. Smart, Ambitious, Crazy, Loving, Passionate, Determined....the list could go on and on.

This girl isn't shy. She talks to anyone and always has something to say. She's my Love Head and Baby Sweetheart. She is a great mix of me and my mother. She has a passion for pretty things and loves to compliment. She loves shopping at the antique mall. She also loves her friends. She loves with every ounce in her body.

At a very young age she decided to call my mom one day. She had been upset with me because I wasn't "behaving" that day and had to tell grandma. I heard her say to her "Mommy is too full of love today" and I thought "How sweet!" Then she goes on..."Yes, she's not giving out any love today so she has too much love yet." I melted....and will forever remember that having too much love is a bad thing sometimes.

Today my first baby girl turns 7. It's an important age and a lucky one at that! She's excited to be 7 and I'm excited that I get to celebrate it with her. Happy Birthday Katelyn Kay! Be amazing today and every day!

Apparently I am a liar.  I said I wasn't going to do anymore pumpkin for a while.  Now my very next recipe is pumpkin.  I'm sorry guys.  I couldn't resist.  I saw this recipe over at Glorious Treats and knew I had to make it.  It helped that I had all the ingredients on hand and it came together in no time.

Monday Miles 9-26 and my weekend in review

I had a short week of running.  I took Monday off after my long run on Sunday and then it was such a busy week I only managed to run 3 days.  I thankfully was smart and did my long run on Saturday because I knew I had Katelyn's roller rink party on Sunday.

On Saturday I am not really sure how far I went.   My Endomondo said 7.5 but I did the same run as last week (7 miles) and wasn't hitting the same mile marks as then.  I mapped my run by hand and it showed me at 8.14 miles instead, however, my pace seems about right for the 7.5 Endomondo had me at.  Sooo basically I ran somewhere between there. 

Weekend in Review

It was a very busy but fun weekend.  On Saturday we went to Octoberfest.  It's a huge event in our area and there are just thousands of people in the streets eating and drinking.  Mike and I checked out the arts and crafts, enjoyed some food we don't normally have and went home.  It's just not the same when you're not drinking!

When we got home we both took a bit of a nap.  The girls were with Mike's parents and they went to some giant corn maze so we had a very relaxed Saturday afternoon.    When they got home they had a surprise for us! 




They also had a blast so it was a great Saturday all around! 

Sunday was Katelyn's 7th birthday party.  Her actual birthday isn't until Thursday but we had a bunch of kids from her school join us for a roller skating party.  All the kiddos were well behaved and it had a great turn out.

We got home and I didn't leave the couch until bed.  Seriously.  I was TIRED.

Aspaeris Review and Giveaway!

Yay!  Another giveaway!  Everyone loves a giveaway!  First I want to review these Aspaeris compression shorts because they are worthy of a review!  These things are great!  They feel great on and they really do make a difference.  I have worn them twice now and both times were my longest runs to date.  My pace was also very good for them being as long as they were.  While wearing these compression shorts I truly feel like I'm running more efficiently.  I feel more held together and like I'm more compactly running.


When I received them I was a little worried.  You pull them out of the envelope and these things look like they could fit my 5 year old!  They go on easy enough though.  My only issue I had, and it may be due to my "pancake ass" is that they felt like they slid a bit below the area I like my shorts to sit while I run.   No crack was showing so it was all good, just took some getting used to for me.  If you haven't read up on running and compression, you need to.  It's completely true that compression helps with during and after a work out!

Chicken Taco Soup


It's one of my favorite things about the weather becoming cooler and down right cold.  SOUP.  It's acceptable to make for dinner 5 out of 7 nights a week.  Mike isn't so happy about soup season.  He thinks I over do it.  I love me some soup and the girls tend to enjoy most of them, so it is what it is!   Many people make Taco Soup with ground beef.  I prefer anything with chicken over ground beef so that is what I made.

Colds Suck

Tonight I am skipping my run.  I am E.X.H.A.U.S.T.E.D.  Did I spell that right?  Spell check doesn't kick in when you emphasize a word with period.  Oh well.  I'm too tired to care.  I can't breath well and so I am forcing myself to breath all day.  It's making me extremely tired and I don't want to get off the couch tonight.  My attitude is something like this:

Anyway, I'm pretty sure it's okay if I skip ONE night.  But I do still feel oh so guilty about it.  That probably has something to do with the fact that I sort of ate two dinners followed by two desserts.  Oops. 

Instead I think I might just get cozy in bed and watch Ghost Hunters with my dear one.   It's one of our favorite things to do!  Lame I know.  That's what happens when you have been married for nearly 10 years.  I can only imagine what it turns into when it's 20, 30, 40+ years together.  We will surely be the life of the party at that point. 

Kenzie just now came out of the bath tub with a cup on her chest stating she had a big boob......

Anyway, time to get cozy with this guy!

Inspiration


I was lucky enough to be here for this moment.  Truly inspirational.  It's definitely a motivator.  This is the 3rd year in a row that this guy has won this marathon.  Amazingly enough he lives in the city that this marathon finishes in which is also the city I live in.  Pride.  Next year I will run the half for this marathon.  It's my goal.  I only wish I had started running earlier in the summer to have been well enough trained to do it this year.  I guess it gives me motivation to keep on running.

White Chocolate Pumpkin Bread



Is anyone here tired of the pumpkin recipes?  I am not but I think this will be my last one for a bit.  I am hoping to go apple picking tomorrow with Mike and the girls and then It'll be apple recipes!  Lucky you!  You can make this into one large loaf but I like to give the sweets away for the most part so I bought a nifty loaf pan that makes 4 mini loafs.  I kept two and only half of 1 of those loaves are left.  Oops. 

Monday Miles 9-19

I had a pretty decent week running. It cooled down and that always helps. The week started off pretty rough. I felt weak and just down right tired so I wasn't sure this week would be successful in the end. Somehow I pulled out over 20 miles this week. That's mostly thanks to my Sunday night long run though.

My long run was such an accomplishment for me.  I had no idea if I'd be able to get it done.  It was 6pm and it was raining pretty steady outside.  It was also only about 55 degrees so I knew it would be a bit cold.  I contemplated even doing my long run and then read some stuff online about running outside and remembered that the last time I ran in the rain, I enjoyed it.  Off I went.  I took a new route and it was actually kind of scary.  It was pretty dark out already when I left and I ran into the connecting city to me.   Then I ran over a lake on a trestle trail.  That was a little scary because it was pretty dark and I was running alone over this lake.  It only got worse.  To get back home I had to run on a 1 lane highway with no sidewalks or trails.  I was forced to run on the road in the dark and then run in the muddy and wet shoulder when cars were coming.  It was not a smart idea.  Once I made it back to the city and sidewalks, I got stopped by a train for about 10 minute right at the 4 mile mark.  Talk about a mojo killer.  I was really doubtful that I would even finish the 7 miles at that time.  I'm not very good at stopping and going again.

The train finally passed and I started running again.  I was actually cold at that point because I was completely wet and the temps were probably about 50 degrees now.  It didn't take long to warm up again.  My focus for the entire run was to take it slow and keep my breathing on track.  I haven't listened to music at all this week and I feel like it actually helps because I can listen to myself breathing.  It's also nice to get away from the same old sound of the same songs playing...even Pandora plays many of the same songs!

Once I started running, my Endomondo refused to tell me my lap times and when I would reach a mile.  I just kept running and running and when I finally looked again I was at 5.62 miles.  I was sooo thrilled.  I knew at that point that I would make the 7 miles.  I was feeling pretty good and only had a few moments where my ankle sort of felt weird.  It subsided though and I ran some more.

At the end I made it to 7 miles and I was so happy and actually felt amazing.  I wore compression socks and compression shorts and I'm not sore today.  I think they are to thank for that!  More on those at another time though!  Here is a picture of me after it was all said and done.  I felt great and refreshed thanks to the constant rain!  I'm not as pale as I look in this picture.....

A little Treat for you!!

Enjoy your Friday! It's the weekend! I have a fun weekend ahead but need to finish work tonight first. After that, the weekend is all mine!

Secondly. I ran 3 miles last night. How is it that my speed is great (for me) all of a sudden? I used to run 11 minute miles and now I'm down to 9 and same change. A.M.A.Z.I.N.G. feeling.

Thirdly. Endomondo told me I ran 14,000 miles last week in one run. I wrote on Endomondos facebook wall about it to see if they are having similar problems or know why this happened and one guy made my day. He simply wrote "All that it means is ur a rockstar!" I couldn't agree more ;-)

RelaxReflect Review and Giveaway!

Pre-warning:  These are the pictures and angles you get when you have your six year old take pictures of you :-)  She didn't do too bad though!!
Ever since I started running early this summer, I have had the luxury of having long days of summer sun.  I had the time to feed my girls dinner, clean up and go for my run.   Now that fall is every so quickly approaching I don't have this same luxury.  My days are getting shorter and shorter and before I even have a chance to clean up from dinner, it's starting to get dark out.  When out running, I feel the same way I do while driving, which is buckle up for safety.  The only difference with running is you need to reflect for safety.  Drivers can't see you if you're wearing dark non-reflective clothing.  It's the small things that matter here!

This is where Relax Reflect comes in.  They have combined two of any runners favorite things.  Safety and Fashion.  Who doesn't want to look good when running?  Who doesn't want to pass a runner up at a race and have that person look at their shirt or pants and think "where did they get those??"  They are different and new and something many people will admire since they are smart yet stylish.

Now my personal review on RelaxReflect.  I received the Giant Stars Leggings to try out from Jean at RelaxReflect.  When I first got them in the mail I was so excited when I pulled them out.  They are adorable!  I knew cooler weather was only a couple of days away so I waited until then to try them out.  The fit is well, pretty true to size.  They don't move around at all once on and fit in a good place on the waist.  They are very flattering as well.  My daughter Katelyn, who is six, was in love with these leggings and couldn't stop touching them and saying how she wanted some for herself (Christmas!!).  I couldn't agree more.  I really have nothing negative to say about the fit and style of these leggings.  They were right on.  The reflective material is really well made 3M material and reflects amazingly (as you can see simply from the pictures).   It's attached extremely well and seems to be durable.

Where the hell is my padded bra?  Obviously not on me!

Now on my run!  Can I say these are magic leggings?  I don't know what it is, but I ran the fastest 5k I have ran while wearing these.  It was a cool night, about 50 degrees, when I went out for my run and they kept me comfortable the entire time.  Nothing moved and nothing managed to ride up the entire 5k+.  I am a happy girl!

Now these do run a bit higher in price than some other leggings that have no cool reflective designs on them, but these are fully made in the USA by a young company out of California.  Of course prices would be cheaper if they were outsourced to other countries but Jean is committed to keeping jobs here in the USA and making a product she can fully stand behind and be proud of.  I think she should be proud.  I really do love her products and will be purchasing from her in the very near future.

For the past few days, something just wasn't right.  I have been SO tired my eyes could barely stay open.  I felt like I had humongous bags under my eyes.  I almost felt like I was coming down with something, but I wasn't.  I blame my failed long run on this as well as my need to walk some of my run on Monday.  It was so bad that last night I DIDN'T run.  I stayed home and did other things that I have been needing to do at home instead but then I talked to Mike and told him about it.  I think I may have figured it out!  I think my Iron was low.  I wont go into much detail but I got my present from mother nature TWO weeks ago and it's still here.   I am hoping this is the end of it but it's been rather odd as I've never had this happen before.  If not, off to the lovely Gyno I go.  In the meantime I have started taking Iron pills and I don't know if it's all in my head but I felt much better last night after taking one. 

Sooo my baby started preschool yesterday.  It's nothing to new.  She did it last year and enjoyed it so this will be her last year and then she will be off to Kindergarten all day long!  I know this year is going to go so fast and it's weird to think of both my girls being gone all day.   Preschool here is only 2 hours a day, twice a week.  It's nice to just break up her day and give her something to look forward to.  Of course I took pictures!

Monday Miles 9-12

This week didn't go as planned!  It's been so hard to get in the miles this week.  I was starting runs late and I didn't have much daylight and I wasn't properly dressed to be running on the roads after it was dark.  My daughters schedule is insane for a 6 year old.  She has something going on nearly every evening of the week, plus I still work some evenings as well.  My long run also didn't go as planned.  My legs failed me bad this time.  I'm not sure what contributed to this but it is what it is.  I am not taking today off like I normally would after a long run since I didn't have a long run at all.

When it's all said and done, I'm not training for anything right now.  I have a 5k next month but that's it.  I need to enjoy running a bit and not push myself to hate it.  I also got a YMCA membership last week so I need to get there this week and start working with weights and maybe take some cycling classes to get some variation in there.

Baked Pumpkin Oatmeal


I've been eating this for the past 2 days.  It's sooo warming and delicious and just a wonderful breakfast.  I served it with milk and that's it.  It didn't need anything else added.

I should have ran Saturday...

But I didn't.  Mike and I had the chance of actually having a bit of a date night and I took it!  We rarely get to go out together anymore without our girls.  I kept thinking about my run, but then I'd remember that running can wait until tomorrow and that I need to enjoy these rare nights out that I get.   We went to dinner and I enjoyed some yummy steak.  Then we went to a local festival and hung out for a bit. 

We live in Wisconsin....and I love beer.  Beer is delicious period.  If you don't like beer, that's fine....you might not want to move to Wisconsin though.  Just sayin'

Well, I enjoyed a couple of these.

We also enjoyed the view....yes that's the moon and it looks like daytime almost but it was dark out!

And we enjoyed making fun of another view.  Nothing like taking a picture with flash of people you don't know!

Do you see half of her butt hanging out?  Mike is the one that told me to take a picture of it.  I'm a good wife and listened for blogging purposes of course. 

So my long run is tonight.  I am nervous for it.  Is it normal to get nervous before a long run?  I am always worried I wont run long at all....and feel upset the rest of the week because I didn't accomplish my goal :(

It's FRIDAAYYY

TGIF!  Unfortunately for me, Friday doesn't mean the end of the work week for me.  It is just another day and I actually work tonight and wont be done until 1am. 

I also set myself up for something to dread all day.  I didn't run last night.  If you live under a rock and didn't hear, the NFL season kicked off and my boyfriend Aaron was on TV all night long.  Mmmm.  ANYWAY....so now I bargained with Mike to let me run when he got home from work this afternoon.  So at 3pm today, I get to go run in the blazing sun and high temps.  I thought the temp would be alright because it's been cooler here this week but I was wrong....I just checked.   Ugh. 

I am working on another delicious recipe!!  More pumpkin!  I can't get enough of it!!!  Until then, please don't forget to enter my contest here.   I have a couple awesome giveaways coming up to that are more focused on the running aspect of the blog!

Bedroom Remodel

Months and Months ago I mentioned that we were remodeling our bedroom.  It took a long time and was such a huge mess.   Mike and I did it completely ourselves and are proud to say it's as beautiful as we were hoping it would be!!

A little back ground.  We bought our house in 2004.  It's a starter house and had some things we've always wanted to fix up.  We've accomplished many things on our list of things to do but we always pushed our bedroom to the back burner because we can always close our bedroom door if we have guests over.  We wanted the main parts of our home to me warm and inviting first. 

The bedroom itself is a fairly nice size.  We always liked that about it.  The closet on the other hand left us frustrated and annoyed.  It was small and not very functional at all, as you'll see from the pictures.   The carpet.....yes....the carpet is not pretty :)  Here we go!

Before Pictures.  These are very old.  Right after I had Makenzie in 2007.  The computer was no longer in our bedroom when we did the remodel.  I only use a laptop now.

And this is where we are today.  We still need to add art and paint the door and trim.  Aurbi naps in our room during the day so her pack n play is there to stay for now, along with the fan to make white noise.

Fall Weather

I don't actually love fall weather.  I mean I do.....but fall is so short here and then it's frozen tundra season and you are in pain every second you step out of your home.  I went for a 4.2 mile run tonight and barely broke a sweat.  Wonderful weather to run in!
